      Six-Layer Dinner

      Source: All New Cookbook for Diabetics and Their Families - University of Alabama at Birmingham

      1 pound lean ground chuck
      4 medium-size red boiling potatoes, peeled and cut into 1/4-inch slices
      2 large carrots, scraped and cut into 1/4-inch slices
      1 large onion, cut into 1/4-inch slices
      1 medium-size green pepper, cut into 1/4-inch slices
      1 (16 ounce) can whole tomatoes, undrained and chopped
      1/4 teaspoon pepper
      1/8 teaspoon dried whole basil

      Cook ground chuck in a large ovenproof skillet with lid over medium heat until meat is browned, stirring to crumble. Drain well, and pat meat dry with paper towels. Wipe skillet with a paper towel.

      Return ground chuck to skillet, and layer potatoes, carrots, onion, green pepper and tomatoes over top. Sprinkle with pepper and basil.

      Cover with ovenproof lid, and bake at 350 degrees F for 45 minutes. Serve hot.

      NOTE: Someone complained that this recipe took TWO hours to bake. I tried the recipe myself, preparing the ground chuck and baking it in a cast iron skillet, and it was ready in 45 minutes.

      Chocolate Caramel Bars

      1 box German chocolate cake mix
      1 tablespoon water
      1 cup nuts, chopped
      8 ounces chocolate chips
      1/2 cup margarine
      1/3 cup evaporated milk
      1 (14 ounce) bag caramels

      Mix together the cake mix, margarine and water. Add nuts and pat half of mixture in 13 x 9-inch cake pan. Bake for 6 to 10 minutes at 350 degrees F.

      Melt caramels in milk. Take first mixture out of oven and while still warm, sprinkle chocolate chips over top. Drizzle melted caramels over chocolate chips. Crumble other half of cake mixture on top of caramel. Bake for 15 minutes at 350 degrees F. Cool and cut into bars.

            Apples and Celeriac W Honey Mustard-Dressing

            -Don Fifield xkgr41a 2 tb Apple-cider vinegar

            2 ts Coarse mustard

            2 ts Honey

            1 Shallot; chopped

            1/2 ts Black pepper

            1/4 c Canola oil

            1 Celeriac root

            2 tb Lemon juice

            2 Green apples; shredded

            1/3 c Nonfat yogurt

            1/4 c Red onions; diced

            2 c Spinach; shredded

            1 c Radish; sliced

            Place the vinegar, mustard, honey, shallots, and pepper in a blender container. Process on high speed until well mixed. With the blender running, slowly pour in the oil to form an emulsion. Trim and wash the celeriac. Cut into a fine julienne and place in a lg bowl. Add the lemon juice and combine well to keep the celeriac from discoloring. Mix in the apples, yogurt, onions, and dressing. Serve on a bed of spinach with the radishes. The Healing Foods Cookbook

            Broiled Pork Chops

            3/4 cup catsup
            3/4 cup water
            2 tablespoons vinegar
            1 tablespoon Worcestershire sauce
            2 teaspoons brown sugar
            1 teaspoon salt
            1/2 teaspoon paprika
            1/2 teaspoon chili powder
            1/8 teaspoon pepper
            6 (3/4-inch thick) pork loin chops

            In a saucepan, combine the first nine ingredients; bring to a boil. Reduce heat; simmer for 5 minutes, stirring occasionally.

            Set aside half of the sauce.

            Place chops on broiling pan rack. Broil about 4 inches from the heat for 4 minutes on each side. Brush with remaining sauce. Continue broiling, turning and basting occasionally, for 3 to 4 minutes or until juices run clear.

            Serve with reserved sauce.

              dr. pepper glazed pecans

              Dr. Pepper Glazed Pecans

              1/2 tablespoons butter or margarine
              1/2 cup Dr. Pepper
              1 cup pecan halves

              Melt butter in small saucepan and add Dr. Pepper. Bring to the simmering point, then add pecans and simmer for 15 minutes or until Dr. Pepper evaporates, stirring frequently.

              Pour pecans over cookie sheet and bake at 275 degrees F for 40 minutes or until crisp, turning at least every 10 minutes while baking.
